PUFF PASTRY RECIPE WITH UNI PUFF 

Puff pastry making was my dream that come true , it seems difficult to make but its very easy , I make it while doing my work in kitchen  as it needs to be refrigerated after each step so after each step I keep it in freezer and I do my other work so like this I don’t feel it difficult to make even I enjoy making it , this is the secret behind my success in making so much  puff pastry.😊 

FOR DOUGH

All purpose flour ( maida ) = 2 cups 

Salt = 1/2 teaspoon 

cooking oil= 2 tablespoon 

Chilled Water = 10 tablespoons

METHOD

1.Add salt & oil in flour mix  it n rub now add water little at a time n knead well make smooth soft dough all water will be used. Now put dough in airtight box n keep in fridge for half an hour. 

FOR MAKING PUFF PASTRY 

✴chilled dough ( we made earlier)

✴200 gm of uni puff   (cold but soft it at room temperature , not melted , press with finger if it make dent in uni Puff means its ready to use )

METHOD:

Divide uni puff in 3  equal parts  parts &  keep a side .

1.Take chilled dough roll it out 1/4 inch thick in rectangle shape apply  one part of uni puff on 2/3 of this roll dough spread n fold the plain part of dough over uni puff  part now fold the uni puff part over it. N wrap in plastic sheet n keep in fridge for 30 minutes .( check pictorial )

2.After 30 minutes roll dough in 1/4 inch thick n repeat the above step .

3.You will do this 3 times  with uni puff  after each fold keep back in fridge because we don’t have to warm the dough n uni Puff. All work is done as it’s chilled. 

4.After all 3 times folding  with uni Puff , now do the same method  3 times folding without uni puff  n keeping in fridge all times. 

πŸ‘‰So total 6 times folding 3 with uni puff n 3 without uni puff . Now wrap in plastic sheet n put in freezer for few hours to make it little  firm so can  easily rollout  now use it .

πŸ‘‰If  not  using the same day then freeze it & use when you want just Before using bring it to room temperature but chilled not warm n use as per your recipe.

πŸ“Can store this puff pastry for a month in freezer, but make sure that it is completely frozen .

πŸ“Don’t open oven door or pateela( pot) lid for first 10 minutes while baking if you open it will release all heat and layers will not form in your stuff .

πŸ“ If baking in oven so In start bake on 200 degrees centigrade  then after 10 minutes reduce temp to 180 degrees centigrade till end.

πŸ“If baking in pateela ( pot) on stove so in start for 10 minutes bake on high flame then reduce to medium till fully done .

πŸ‘‰For height of baked goods , Roll out puff pastry  1/4 inch thick  to get  nice height  and rise in your stuff.

πŸ‘‰while baking anything from puff pastry  it’s will release extra Uni puff so don’t worry it’s ok,  if want just take out baking tray drain extra uni puff n put back for baking. Or leave it anything is baking  will absorb all that extra by itself .The layers are visible just with this release extra.

πŸ‘‰Don’t reduce amount of uni puff that I mentioned in recipe , as I did experiment the layers were  not visible when I reduced.

DOUGH K AJZA

Maida = 2 cup

Namak = 1/2 teaspoon

Pakane ka teel ( oil ) = 2 tablespoon

Thanda Pani = 10 tablespoons

1.Mede mai namak or teel mila len or gondh len ab thora sa pani  dal kr gondhen ache trha or naram se dough bna len pora pani b istemal ho sakta ha.

Ab ess dough ko debbe ( box )mai dal kr aedhe ghente k leye fridge mai rakh dain.

2.ab ess ko plastic sheet mai lapet den or fridge mai 30min k leye rakh den.

3. phir 30min k baad nikal kr dough ko 1/4 inch mota bail len or oper wala step dobara kren.

 4.Aesay 3 bar krna ho ga uni puff k sath or her fold k baad fridge mai zaroor rakhen ta k uni puff  or dough garam na hon.har step tabi ho pay  ga  jb ye achi tarah  thanda ho.

5. uni puff k sath 3 bar ke fold k baad same foldes 3 bar bina uni puff  k kren or hr bar fridge mai rakhen.
